      为降低马铃薯在低温贮运过程中受到的机械损伤,基于显微成像技术及低温微力原位 加载技术,对马铃薯组织进行力学载荷与温度载荷复合作用的拉伸实验。采用不同拉伸方向(x、y、 z)与降温速率(0.5、1.2、2.0 ℃/min)对样品进行处理,对其拉伸过程中的力学性能参数(最大破坏应 力、应变、弹性模量)进行统计分析,力学性能参数的多变量差异分析通过SPSS 26软件实现。结果 表明,降温速率与拉伸方向对马铃薯组织的最大破坏应力存在显著性影响(P < 0.05),在降温速率 为2 ℃/min条件下,各方向上样品的最大破坏应力均达到峰值;进一步分析显示,拉伸方向对应变 存在显著性影响(P < 0.05),且z方向上的马铃薯样品力学性能参数表现最好,弹性模量主要受降温 速率的影响。

      In order to reduce mechanical damage of potato during low-temperature storage and transportation, microscopic imaging technology and low-temperature micro-force loading technology were employed to conduct tensile experiments on potato tissue under coupled mechanical and thermal loading conditions. Potato tissue samples were subjected to different stretching directions (x, y, z) and cooling rates (0.5, 1.2, 2 °C/min). Statistical analysis was performed on the mechanical pa⁃ rameters (maximum failure stress, strain, and elastic modulus) during the tensile process. Multivariate difference analysis of mechanical properties was implemented with SPSS 26 software. The results showed that both cooling rate and tensile direc⁃ tion significantly affected the maximum failure stress of potato tissue (P < 0.05). Under a cooling rate of 2 °C/min, the maxi⁃ mum failure stress of samples reached peak values in all tensile directions. Further analysis indicated that tensile direction significantly influenced strain (P < 0.05), with the z-direction samples demonstrating optimal mechanical properties. Addi⁃ tionally, the elastic modulus was primarily affected by cooling rate.
