| 随着科技的不断进步和生活质量的提升,人们对肉类品质的要求也越来越高,智能控
释包装技术在肉类保鲜中的应用表现出巨大的潜力。智能控释包装可以通过感知肉类或其储存
环境的特定变化来精准控制抗菌剂等活性物质的释放,从而保证食品质量。本文概述了智能控释
包装的主要响应机制,重点分析了pH敏感、湿度响应、温度感应、光敏感及酶促控释5类智能包装
的最新研究进展,并总结了其在肉类中的应用现状和面临的挑战,旨在为智能控释包装在肉类保
鲜中的应用研究和产业发展提供参考。 |

| With the continuous advancement of technology and the improvement of living standards, people′s
requirements for meat quality have become increasingly higher. The application of intelligent controlled-release packaging
technology in meat preservation shows great potential. Intelligent controlled-release technology precisely controls the
release of active substances such as antibacterial agents and antioxidants by sensing specific changes in meat or its storage
environment (such as pH value, temperature, humidity, light, etc.), achieving on-demand preservation. This article outlined
the main response mechanisms of intelligent controlled-release packaging, focused on analyzing the latest research
progress of five types of intelligent packaging: pH-sensitive, humidity-responsive, temperature-sensing, light-sensitive,
and enzymatic-controlled release. It also summarized the current application status, challenges, and future prospects of
these technologies in meat,which provide a reference for the research and industrial development of intelligent controlledrelease packaging in meat preservation. |
